IT’S DECEMBER!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!


This is undoubtedly my favourite month of the year and why not? Isn’t everything so cheery and happy at this time of the year?

It’s cold, sometimes freezing cold! But better than the sweltering, unbearable heat! Plus, it’s the Christmas month and it just so happens that I absolutely love love LURRRRRVVVVEEEE Christmas!!!!!

One of the reasons is probably because of the way I’ve grown up.

Now I’m gonna take you at least 15 years down memory lane.

I guess I was like 3 years old or something and my mom had bought be this amazing red stocking that I would hang by my bedroom door before going to bed on the night of 24th December!

My mum would ask me well before Christmas as to what I’d want to ask from Santa that year, which I would tell her very very sincerely! 😀

So, I would fall asleep and when I would wake the next morning, I’d rush straight to my stocking only to find it EMPTY! -_-

And then, being ever so upset, I’d go back to my bed only to find some kind of a discomfort around my pillow.

Then I’d get it! And there used to be the most amazing collection of toys that I’d ever seen! The latest Barbie doll {I still remember the craze for this one particular Barbie whose hair would change colour if it was brushed with ice cold water}, A lovely kitchen set with all the miniature vessels, gas stove and all {yep, I’ve been obsessed with cooking right since that age}, toy guitars and all that! Hahahaha

When I think of it now, it feels sort of hilarious but I had so much fun then! And the best part is I would always think that it’s Santa who gave me all of that when eventually a few years later at 10 or 11 years of age, I found out that it was my mum who used to do all that! And there were no Christmas presents after that!

But it’s all these memories that make this Holiday season SO SO SO special!

So, I thought, why not dedicate this Month to Christmas and make it Christmas Special!

YAY For thattttt!!!!!!!!!

So I decided to make mince rolls! Yeah, well, by now you must be familiar with my addiction to making breads! So I added a little twist to this one too and it WORKED!!!!

I didn’t make the usual mince pies and I soaked the dry fruits in black tea for a good 24 hours. It made the dry fruits really plump and they smelled heavenly. Then I enrobed them in aromatic spices and dark brown muscovado sugar and oooooohhhh!!!! Makes me salivate every time I think about it!

So i’m not wasting any more time and presenting the recipe already! 🙂

Zig-Zag Mince Rolls:

For the mince filling:

1/4th cup raisins and currants

1/4th cup chopped seedless dates

1/4th cup prunes

1/4th cup cranberries

1 orange zest

1 cup black tea

Juice of 1 orange

1 tbsp dark brown muscovado sugar

½ teaspoon each of ginger powder, clove powder, cinnamon powder, nutmeg powder

For the roll:

250 gms all purpose flour

80 mls milk

30 gms butter browned

1 ½ tsp yeast

1 tbsp sugar

1 egg


Soak all the dryfruits along with the orange zest in tea for 24 hours in a glass bowl and inside the refrigerator. The next day, add the juice of 1 orange and dark brown muscovado sugar. To that add ½ tsp clove powder, cinnamon powder, ginger powder and nutmeg powder. Keep it aside.

Make the dough. First dissolve the yeast in some warm milk. Add sugar to the yeast so that the yeast is properly activated.

Next, heat some milk and sugar. In a separate saucepan, brown the butter. Seriously you guys, this thing is pure gold! Brown butter, you’ve stolen my heart! 😀

Now, once your yeast starts to bubble up, mix it into a beaten egg and add it straight into the flour. Keep adding the milk till you reach a soft dough. Knead it very well at least 5 minutes. The dough will stop sticking to the counter top. Now, you need to add your brown butter to the mix and knead for a good 5 minutes. Again, the dough will stop looking oily. Stop right there and leave it to prove in a warm spot for 1 ½ hours. Once that’s done, roll out your dough and follow the steps described in these 2 .gifs.

Cover with a cloth and prove for another 30 -45 minutes. Now preheat your oven to 230 degrees and bake it for at least 17 minutes.

The roll itself will look very dry. Therefore, as soon as you get it out of the oven, you need to brush it with honey. It looks deliciously glistening and all you need to do now is feed your face! 😀

  4. This bread is gorgeous! I’m still a mince newbie–I think I’ve had it once or twice but it’s not very common (at least in my family) so I’m so intrigued by the idea of making it myself! Love your twist on the traditional mince pie.
